Abstract
Küreselleşen dünya farklı kültürlerin iç içe girmeye başladığı, etkileşimlerin önceki yüzyıllara göre hızlandığı bir dönem yaşamaktadır. Yüzlerce çeşit geleneksel yemeği barındıran Türk mutfak kültürü de bu durumdan etkilenmektedir. Bulunduğumuz yüzyılda yaşanan teknolojik, ekonomik, sosyolojik gelişmeler yemek kültürümüzde önemli değişimler görülmesine sebep olmuştur. Çalışma hayatının ve günlük yaşamın, zaman kavramına yüklediği yeni anlamlar, yemek eyleminin sürelerinin kısalmasına neden olmuştur. Sosyal medya gibi toplumun büyük çoğunluğunun dâhil olduğu sosyal ağlar, insanların özel yaşamlarını paylaşmaya olan eğilimi, yemek yenilen mekânlara ve yemek eylemine farklı bir boyut kazandırmıştır. Bunların yanı sıra, dünyayı sarsan Covid-19 virüsünün etkileri, dünya ekonomisinde hemen her şeyi etkilediği gibi yemek sektörünü de etkilemiştir. Virüsün sebep olduğu pandemi süreci, yeme-içme alışkanlıklarımızda önemli değişiklikler yaratmıştır.
Makalede, yemek sektörü üzerinden Türk mutfağının yaşadığı değişimler ve bunun kültürümüzle olan bağı ele alınmaya çalışılmıştır. Çalışmada, öncelikle geleneksel Türk mutfağının kısa tarihine, ardından Batılı akımlardan nasıl etkilenildiğine yer verilmiştir. Çalışmada, yemek tercihlerimizin geleneksel çizgiden uzaklaşmaya başladığı tespit edilmiştir. Günümüzde bu tercihlerin sağlık-ekonomi-zaman-görsel çekicilik gibi kriterlerle yeniden şekillendiği tespiti, literatürden yararlanılarak anlatılmıştır. Türk mutfağının kültürel açıdan içinde bulundurduğu imgeleri, kültür ekonomimizdeki yeri, kimlik arayışı içindeki günümüz insanının Türk mutfak kültürüyle ilişkisi ele alınmıştır. Restoranların sadece yemek ihtiyacını gidermediği, aynı zamanda görsel yönleriyle kişinin hayatına farklı imajlar kattığı bir çağda, Türk mutfağının yerini sağlamlaştırabilmesi adına yapılabilecekler ifade edilmeye çalışılmıştır.

Abstract
The globalizing world is experiencing a period when different cultures begin to intermingle and interactions increase compared to previous centuries.Turkish culinary culture, which contains hundreds of traditional dishes, is also affected by this situation.Technological, economic and sociological developments in the century we live in, have caused significant changes in our food culture.The new meanings attributed to the concept of time by working life and daily life have caused the duration of the meal to be shortened. Social networks such as social media, in which the majority of the society is included, have brought a different dimension to the eating places of the people, the act of eating and the tendency of people to share their private lives. In addition to these, the effects of the Covid-19 virus, which shook the world, affected almost everything in the world economy, as well as the food industry. The pandemic process caused by the virus has created significant changes in our eating and drinking habits.
In the article, the changes experienced by the Turkish cuisine through the food sector and its connection with our culture have been tried to be discussed. In the study, first of all, the short history of traditional Turkish cuisine and then how it was influenced by Western movements are included. In the study, it was determined that our food preferences started to move away from the traditional line. Today, the determination that these preferences are reshaped by criteria such as health-economy-time-visual attractiveness has been explained by using the literature. The cultural images of Turkish cuisine, its place in our cultural economy, the relationship of today’s people in search of identity with Turkish cuisine culture are discussed. It has been tried to express what can be done in order to strengthen the place of Turkish cuisine in an age where restaurants do not only meet the need for food, but also add different images to one's life with their visual aspects.
