Abstract

Every society has its own unique dishes. These dishes, in a way, it reflects the characteristics of the national society. The Turks gave more importance to meat-based dishes. In this study, on “kitchen culture” which is an important part of folk culture has been applied. In other words, by entering the folklore research, commonly known as “kitchen culture” which is known as a traditional Anatolian dishes focused on preserving from past to present. However, the first geography, history, culture of Çorum and İskilip presents an overview on. Because, the food culture from geography and history are not independent. After the expiration of this general outline stuffed of Iskilip mentioned. This dish which the famous with name of “Iskilip stuffed” is a unique dish to special occasions such as weddings and festivals. In fact, Iskilip’s in places where it took him to migrate a traditional dish. For example, İskilip’s which living in Ankara make stuffed Iskilip come together at certain times. In our research, “Iskilip stuffed”, introduced by considering the process be made until the moment arrives to the table. The aim is still living, and the importance of these cultural and traditional food to draw attention to the scientific study.
